Parlor Donuts
I believe Parlor Donuts are the United States’ best kept secret. I said it here first. They offer both keto and gluten-free options. No one I know does this! Although the keto version (top photo) is more “cakey”, it was sweet without being overly, weirdly sweet. The bottom two were also incredible. Because I couldn’t not take a bite. And they offer coffee, which is a must with sweet donuts.
Rebel Pistachio
I love the Rebel brand, and each flavor is good. However, Pistachio is the best of the best. So good, in fact, I had it 2 nights in a row. Big deal.

While mini was enjoying her summer shenanigans, McK and I were planning things for us to do. Because of our genuine love for mini, we decided to wait on a few things and take mini on a girl’s day.
First up – Lip Lab in Frisco, TX
Actually – the first thing we did was eat lunch at Bread Zeppelin (catchy, right?). Hands down, best salad I’ve probably ever had. Mini got her salad stuffed in a baguette, which is the entire concept. As I don’t eat bread like that, I just got a bowl but I can see the draw.
Of course we visited a coffee shop. McK and I have been following the multiple locations of Ascension Coffee for some time – the location we really want to visit is in a converted church. Alas, we were near the Dallas Cowboys stadium so that’s where we went instead. I got the Keto coffee. Amazing. McK got a latte and stated it was delicious, Parts had a Salted Caramel Cold Brew. She said it was very strong but the salty flavor was nice. Amateur.
Mini told me to make certain faces. I obliged but she seemed a little grumpy at my interpretations.
Finally, the lipstick details.
I have jokes. No need to comment on my naming convention as I’m utilizing scientific research that states your ideal lipstick color is 1-2 shades lighter/darker than nipple color. Hey, it’s science.

I have never been more impressed with a keto recipe than this one for Cinnamon Rolls, courtesy of Keto4karbaholics.
Note: I did not add pecans or use the ChocZero syrup and I was still impressed with the texture, taste, and inability to eat just one.
I’m super. And I’m a runner. Does that make me a Super Runner? Technically, yes. But probably not in the same category as those people.
On the super subject, for Mother’s Day I received a cycling helmet and sunglasses so I guess it’s official – I’m a cyclist. Hahaha I’ve done maybe 3 rides and now I’m a cyclist. Looking and feeling the part is half the battle to conviction so I’m getting there! There’s an upcoming Mini Triathlon I’m considering participating in. While I know I can ride a the route and I can run a 5k, too, the swim isn’t so much my concern as the way the day will rapidly heat up. In discussing it with McK, the worst that can happen is I end up walking the 5k…or she picks me up and I ride back to the finish line. With no entry fee, there’s not much to lose!
I also found this event: Tour of the Wichitas. The route lengths vary from nearly 17 miles to over 50 miles and it literally takes you on a tour of Ft. Sill, LETRA, and the beautiful area near Mt. Scott. As it’s only about an hour drive from me, I was considering it but am unsure if I can commit 3 hours to a bike ride. Interestingly, why are cycling events so cheap?!?! $35 to enter?! The last time I entered a half marathon, it was at least double that. Granted, there is no price tag to the medical attention I have found myself needing, but still.

The final look of relief when another course is completed. But, by the time you read this, I’ll have begun Dissertation I. The pre-dissertation course wasn’t difficult, per se; however, it was somewhat tedious. Communication with my chair has been one of the best experiences so I can see how that’s a make-it-or-break-it portion of others’ stories.
If you’re wondering what I’ll be doing this summer, well, there you have it. 15 weeks, then another 15 weeks, then a 3-4 week break, then 15 weeks, then…something. Defense, maybe? It’s a huge change from the traditional 8 week courses I’ve been doing for nearly 2 years. I need a plan!
Instead of making a plan, I forego any real responsibilities and eat ice cream. As Blue Bell is decidedly not keto, pick the battles well. Good thing this Snickerdoodle ice cream by Rebel was conveniently located in my freezer!

Yes. I bought it. Honestly, not their best work. The pieces of cake are delicious but the ice cream is plain vanilla. Not a huge fan.
I think about this sandwich more than I should. But it’s keto so not a big concern. It’s also amazing with just scrambled eggs, bacon, and avocado. Trust me.

I seriously overestimated my ability to complete a 40 source annotated bibliography during spring break. It’s not that I couldn’t do it, it was entirely manageable, but I encountered some unexpected issues that prevented me from completion. First, the Internet was undergoing prolonged maintenance. As we use a local company, the customer service is incredible but sometimes things take longer than a conglomerate company with billions of dollars at its disposal. Then, our birthday happened, aka making evening plans in lieu of writing. Finally, I’m still figuring out how to navigate volleyball games with my ideal writing schedule. Luckily, this was a late game which theoretically meant I could write pre-game. Instead, I spent that time getting ready for said game, getting mini ready for said game, and doing all the things I would normally do before bedtime (remember, late game). Alas, the excuses are rampant.

Pretty sure I’ve forgotten to share here how I gave up Gummies on Jan 1st and haven’t returned. I realized that my game play was becoming a slight problem, my productivity wavered, and I wondered if I could truly commit to quitting. Based on how the first several days went, I think I may have been addicted. Seriously. My fingers automatically went to the app each time I picked up my phone, I was severely tempted to play out of boredom, out of response, out of habit. Fortunately during that time, there was plenty to do around the house and it might have been the most productive period, partially due to the school break but also in a concentrated effort to forego Gummies. Sometimes I still get the urge to open it up and play “for a minute” – but I know about addictive tendencies and “a minute” will stretch into hours. Be strong!

For some time, I thought my favorite coffee was defunct because I couldn’t find it at any of the usual grocery stores. I may have panicked a little. So when I saw the Starbucks Brown Sugar Cinnamon, I was somewhat relieved that maybe I had found an alternative. It’s good albeit slightly more expensive than what I was purchasing. However, it appears to just have been a supply chain issue because I can order my favorite from Amazon, and surely it will return to store shelves eventually. Surely.
Blue Bell has always been one of my favorite ice cream brands. Yes, I know I wrote in a previous post that Braums was my favorite; however, I only rank it slightly above Blue Bell due to the extra creamy texture. Blue Bell is like my childhood sweetheart – never forgotten, classic, a part of my DNA. I’m not sure who created the Cinnamon Twist flavor, but I want to kiss them while simultaneously beating them with a big stick. It’s somewhere between a churro and the ooey gooey incredible middle of a cinnamon roll. I ate so much it made me very sick yet (as many of you know, I balance the non-keto world in terms of “is it worth the headache and migraine symptoms”) it was decidedly, unequivocally, do it all over again WORTH IT. It was so worth it that I have managed to turn most conversations regarding benign things into a discussion about how amazing it is. Trust me, I make it really weird.
Now, I shall return to work or writing papers or whatever I’m supposed to be doing whilst daydreaming about coffee and ice cream. Affogato, anyone?

For seemingly no reason at all, last week literally kicked my arse. Team No Sleep – I was averaging 4 hrs of sleep per night, my Garmin was almost on the fritz with the what-is-wrong-with-you? Weirdly I kept having this recurring dream about a bobcat. I’m clueless. When I finally exhausted the bobcat dreams, it progressed to gummy bears. I give up.
Volleyball – I spent more time on the ground than I did upright and my body bore the marks. Even with knee pads, I tore open my knee from a previous week’s injury sans kneepads. Note to self – purchase better kneepads. My grandmother would be appalled. She had this thing about women having pretty knees. As a teenager, I made a wildly inappropriate joke and she was not pleased! Nonetheless, I think my second career as a knee model is doomed. My body looks and feels like it got run over. There was one point in the game when I fell on the floor and the ball wasn’t even near me. How, Kel?! Obviously in volleyball the object is to stay low but I just … fell. Who needs hips anyway.
Teamwork
By the end of the week, the events really started to ramp up. We hosted a run/walk/remember 5k so, of course, like a good little overachiever, I planned to run it knowing well enough I had blood work following it. Hydration? Psshhhh. So I devised a plan to bribe a friend to be my water girl during the run so I could ensure I stayed hydrated. Conflict of interest? Maybe. More importantly, the blood work part of the day never materialized because it was FASTED blood work and I drank my coffee, ate breakfast, downed electrolytes, and did all the things one should not do before fasted blood work. Alas, I had to reschedule. More to follow.
Finally, I received a B+ on the paper I had stressed and stayed up countless hours writing with literally a miniscule of guidance from the professor. Not pleased. So, I sulked for a day and ate a pint of ice cream (keto, of course).
The next morning – back at it. Indeed, life does go on.

I’ve been hesitant to mention it on here but a comment from someone recently instigated some reflection. Many of my most loyal readers know I’ve been exclusively keto since January. If you’re a loyal reader and missed it somehow, well now you know. There’s been a few instances of falling off the wagon (namely, my birthday and Mother’s Day). For the most part, however, no big tumbles. I won’t lie and say I didn’t want to lose weight, but my primary motivation was to lessen the amount of relentless migraines. I have kept an eye on the scale for posterity yet it was just a tool.
So imagine my surprise when I did the calculation and realized I’d lost nearly 25 lbs. Sure, I noticed the difference in how my clothing fit and I did end up buying a smaller size a few months ago but I really can’t see the weight loss on myself. The biggest bonus is realizing I haven’t had a migraine requiring medication since May. That’s 3 months ago. And it was just a few days after Mother’s Day which is when I ate about 6 Crumbl cookies because I like to celebrate super hard. Genius.
consistently running
Nearly any amount of refined sugar and flour now causes a headache so I avoid it at all costs. Even when I think I want something sweet – and cravings do still happen – I manage with sugar alternatives or coffee, etc. For the weight loss portion, I try not to give it too much power because I know how susceptible I am to a disordered eating mindset. Really, I’m proud of how I’ve managed to continue running and working out – sometimes twice daily – yay laundry.
It almost shocks me the weight I use at the gym: something I thought I’d never work up to and never have before. I genuinely feel strong. Now, it’s nothing compared to others but, thankfully, I’m not like anyone else. I’ve never been able to maintain weight loss while also continuing to work out so this is new territory. It doesn’t hurt that I literally have an entire workout facility, two actually, at my fingertips. Sure, some days get away from me and sometimes I don’t give it my entirety but I’m still there doing it and it’s something to be proud of.
Alas, occasionally I do miss the sweet stuff but it’s just not worth it.
