(Some More) Favorite Things

Many of you know of my struggle with foot pain due to what has been attributed to bunions. In the quest to find supportive every day shoes that somewhat keep the pain to a minimum, I found Flux Footwear. Now I own 3 pairs: hot pink, black, and solid white. Huge fan! At first, I was a little uncomfortable about purchasing a pair of white shoes; however, so far, no catastrophes!

Also, I’ve developed a love for matte nail polish. Typically I do my own nails because my splurge is the pedicure. What I thought would look hideous turned out to be a favorite. As mini is a nail biter – and I also was as a child – keeping my nails painted aka protected is essential for their growth. Mini’s issue is she bites the paint right off of them. It’s a source of discontent but I have faith she’ll grow out of it. Probably.

Lastly, Gerber Daisies. Favorite flower. Just as many (including me) hold fast to traditions like black-eyed peas and cabbage on New Year’s Day, I also have my very own traditions. Although I can’t think of any at this moment. Nonetheless, here’s my newest: starting each new year with fresh flowers and what better flower than my absolute favorite?! I can’t stay up until midnight but I can wake up to a beautiful bouquet.

I know I had several other favorites to add to this post, but right now I can’t recall them. Another post for another day, surely.

A Few (More) of My Favorite Things

A previous post by the same name just didn’t encompass everything I had hoped to share so I decided to do another. Because that’s what I do.

The semicolon ring above was a Christmas gift from my spouse. I stopped wearing the one before it after it became completely bent out of shape due to my inherent ability to run into walls, get my hands stuck in weird places, and overall wear and tear. But mostly wear and tear.

The semicolon is significant because it symbolizes the continuation of a story, sentence, or thought. Many people have it tattooed as a reminder of suicide awareness which is also the reason I wear it. Some may know my dad died by suicide when I was a child so this is a reminder of a life gone too soon. I’m also very aware of Veteran suicide rates; thankfully I do not know anyone personally, but I do have friends who have either struggled or know others who succumbed to their struggles.

My sister gifted me the journal above. It has beautifully organized pages and helps me get my thoughts in order. A huge plus, in my book. No pun intended. Her faith journey is so intentional – I’m trying to follow her lead.

Lastly, no bake cookies. I’m addicted. In the past 3 weeks, I’ve made no less than 4 batches of these cookies. They’re so easy and that’s the problem! Friends have even requested them – for money. I was joking when I said $5/batch. But maybe I shouldn’t have been.

Why do you run, Kel? So I can eat cookies!

Childhood Favorites

“Hot Jello Water” – the process of drinking the jello before you ever put it in the refrigerator to solidify. To be fair, as kids we called it Hot Jello, but mini coined it Hot Jello Water so here we are. HJW was a childhood staple/treat whenever we were sick. I think mom found a way to get calories and sugar inside our little bodies. Fun fact: my little human doesn’t like jello. Really, I didn’t know this was possible. But she loves some hot jello water!

I don’t have a photo for this next item. Even if I did, the photo would do it no justice. My mom’s famous – only to me – Mexican Casserole. Think layers of corn tortillas, cheese, and a ground beef/green chili mixture. I realize the simplicity of these ingredients, but for some reason whenever I try to recreate this dish it just isn’t “right”. Whenever I hear the words Mexican casserole, this meal immediately comes to mind but no one makes it like mom does.

Mini doesn’t know it yet but this final food will become a staple at all sleepovers and girls’ nights we ever host. The most clever name my sister and I ever came up with was “Frozen Banana Things”. To hear my mom tell the story, her mother would make these when she (my mom) and her siblings were young. Basically, you stab a single, sliced banana piece with a toothpick, top with a marashino cherry, (one banana slice, one cherry per toothpick) and assemble banana-down on a rimmed baking sheet. Then, you pour lemon juice in the baking dish until the banana slices are almost covered. Freeze the entire baking sheet until bananas are frozen. To eat, break apart (if necessary) each frozen banana thing.

Missing: cherries

According to my childhood friends, they’re addictive; a perfect sweet, sour treat. I haven’t had them in years, but I still remember the joy of making and sharing these late at night. Soon enough, the pitter patter of little feet sneaking them from the freezer will be heard. But first, rest!

What childhood dishes did you enjoy?

Is there another name for the Mexican casserole I mentioned? It’s similar to King Ranch Chicken Casserole.

Share ideas for ingredients that don’t seem to go together but work well! Lemon juice and bananas!
